I have made this treat for years now. It's so simple and taste so good.
Rice Crispy Chicken Fingers
3 uncooked chicken breast cut up into finger lengths or nugget bites
1 stick of melted butter
3-4 cups of rice crispy cereal smashed in a bag with a rolling pin or put in a food processor to crunch them up smaller.
Add a shake or two of Salt (approximately 1/4 tsp), pepper or poultry seasoning as you wish to the rice crispy mix. I only add salt.
The recipe amounts may vary slightly according to the size of your chicken breast.
Dip each piece of cut up chicken in melted butter then in the rice crispy mixture. Put coated pieces on a baking sheet and put them in a preheated oven warmed to 400 degrees. Bake for approximately 15 to 20 minutes. Test them with a knife or fork to see that they stick tender and they are cooked through. They should be golden brown as well.
Enjoy them just as they are or with your favorite dipping sauce.
