This homemade hot fudge is made with honey not sugar. My body does not tolerate white or brown sugar but I can eat honey. So I modify many things using honey. I also use the no added sugar ice cream.
In a small sauce pan on the stove add:
1 TBL. real butter (I tried margarine and did not like it)
1 TBL. 100% cacao, powder baking cocoa (unsweetened)
2 TBL. Milk, (coconut, almond or other works great. I use coconut milk).
2 TBL. honey (or you can use Agave nectar syrup)
Turn heat on to medium high and whisk all ingredients with a flat bottom sauce whisk or other until it boils down into a thick mixture of fudge sauce. This happens quickly. Watch it so it does not burn. Pour over your ice cream or angle food cake etc. and enjoy!
This recipe makes enough for 1 large or 2 small servings.
This is so good and you do not taste the honey at all.
When substituting honey for sugar keep these facts in mind. Honey is sweeter so 3/4 cup of honey to 1 full cup of sugar.
When baking, reduce any liquids by 1/4 cup for every cup of honey and reduce heat 25 degrees because honey burns faster than sugar.
